The ancestral method, a technique very similar to pet nat, is the oldest system for making a sparkling wine in a natural bottle, the wine is bottled at the crescent moon, with the addition of dried grape juice or natural residual sugar from the first fermentation that gives the refermentation in the bottle.

The result is a natural, more persistent and long-lasting sparkling, not being filtered it keeps the bubbles longer.

This technique was passed down to us by Tonio, the moustache, Cinzia's father, who produced a little wine for him and also made a sparkling wine. Spontaneous fermentation.
