Holy Goat - Mirrabelle, Mixed Ferm Sour With Plums, 6.5%

Mixed Fermentation Golden Sour with Mirabelle Plums 

Our house culture of Brettanomyces was aged for four months with a base beer of Golden Promise pale malt, wheat and locally grown oats. We refermented this base with 220g/l of Mirabelle plums. Referred to as the ‘queen of plums’ Mirabelle’s are a golden varietyrenowned for their sweetness and complex layered flavours, notably honey, peach and apricot.
